Ingredients
- 1 cup (240 ml) fresh grapefruit juice (about 2 large grapefruits)
- 1/4 cup (60 ml) rosemary simple syrup* (see below)
- 1/2 cup (120 ml) club soda or sparkling water, plus extra to top
- Ice cubes
- 1 sprig fresh rosemary (for garnish)
- Grapefruit slice or twist (for garnish)
- Optional: 1 tsp fresh lime juice (for extra brightness)
- For the rosemary simple syrup: 1/4 cup granulated sugar, 1/4 cup water, 2 sprigs fresh rosemary
Instructions
- Make the rosemary simple syrup: In a small saucepan combine 1/4 cup sugar, 1/4 cup water and 2 rosemary sprigs. Heat over medium, stirring until the sugar dissolves. Simmer 1–2 minutes, remove from heat and let steep until cool. Strain out rosemary and chill.
- Juice the grapefruits and measure 1 cup (about 240 ml) of fresh grapefruit juice. If desired, add 1 tsp fresh lime juice for brightness.
- In a cocktail shaker or jar, combine grapefruit juice, 1/4 cup rosemary syrup and ice. Shake or stir vigorously to chill.
- Divide ice between two glasses. Strain the grapefruit mixture evenly into the glasses.
- Top each with club soda to taste (about 1/4–1/2 cup), gently stir to combine.
- Garnish with a sprig of rosemary and a grapefruit slice or twist. To release aromatic oils, clap the rosemary between your hands before adding.
- Serve immediately. Store leftover syrup refrigerated for up to 2 weeks.
